how to make pectin at home:

Ingredients:

  • 6 large unpeeled apples, preferably green, chopped into 1-inch chunks (including cores and peels), or 2 quarts apple cores and peels.

  • 5 to 6 cups water, to cover.

  • 1 tablespoon lemon juice or citric acid.

Instructions:

  1. Wash the apples and remove any bruised or damaged spots.

  2. Cut the apples into quarters and core them.

  3. Place the apples in a large pot and add enough water to cover them.

  4. Add the lemon juice or citric acid.

  5. Bring the pot to a boil over high heat, then reduce the heat to low and simmer for 2-3 hours, or until the apples are very soft and mushy.

  6. Remove the pot from the heat and let it cool slightly.

  7. Line a colander with several layers of cheesecloth and place it over a large bowl.

  8. Pour the apple mixture into the colander and let it drain for several hours, or overnight.

  9. Discard the pulp and reserve the liquid.

  10. Bring the liquid to a boil over medium heat and cook for 10-15 minutes, or until it has thickened and reduced by about half.

  11. Let the pectin cool completely before using it in your recipes.
