how to make pectin at home:
Ingredients:
6 large unpeeled apples, preferably green, chopped into 1-inch chunks (including cores and peels), or 2 quarts apple cores and peels.
5 to 6 cups water, to cover.
1 tablespoon lemon juice or citric acid.
Instructions:
Wash the apples and remove any bruised or damaged spots.
Cut the apples into quarters and core them.
Place the apples in a large pot and add enough water to cover them.
Add the lemon juice or citric acid.
Bring the pot to a boil over high heat, then reduce the heat to low and simmer for 2-3 hours, or until the apples are very soft and mushy.
Remove the pot from the heat and let it cool slightly.
Line a colander with several layers of cheesecloth and place it over a large bowl.
Pour the apple mixture into the colander and let it drain for several hours, or overnight.
Discard the pulp and reserve the liquid.
Bring the liquid to a boil over medium heat and cook for 10-15 minutes, or until it has thickened and reduced by about half.
Let the pectin cool completely before using it in your recipes.
