how to make pectin at home:
Ingredients:
- 6 large unpeeled apples, preferably green, chopped into 1-inch chunks (including cores and peels), or 2 quarts apple cores and peels. 
- 5 to 6 cups water, to cover. 
- 1 tablespoon lemon juice or citric acid. 
Instructions:
- Wash the apples and remove any bruised or damaged spots. 
- Cut the apples into quarters and core them. 
- Place the apples in a large pot and add enough water to cover them. 
- Add the lemon juice or citric acid. 
- Bring the pot to a boil over high heat, then reduce the heat to low and simmer for 2-3 hours, or until the apples are very soft and mushy. 
- Remove the pot from the heat and let it cool slightly. 
- Line a colander with several layers of cheesecloth and place it over a large bowl. 
- Pour the apple mixture into the colander and let it drain for several hours, or overnight. 
- Discard the pulp and reserve the liquid. 
- Bring the liquid to a boil over medium heat and cook for 10-15 minutes, or until it has thickened and reduced by about half. 
- Let the pectin cool completely before using it in your recipes.
